As a Assistant Hygiene Manager, you’re not just overseeing daily back of house operations – you’re spreading the light and warmth of hospitality by delivering memorable experiences that make the stay for every guest.

Responsibilities

Here's what you'll do during a typical day:

  • Propose and maintain minimum standards in all work areas, stores, receiving and disposal areas to adhere at all times to required hygiene standards.
  • Responsible for effective and efficient maintenance of records related to the Hotel's sanitation and hygiene efforts/program.
  • Conduct and chair the Food Safety Monthly Meeting.
  • Monitors, assists and performs all procedures and protocols for maintaining an excellent sanitation and hygienic environment.
  • Is part of the Hotel's Sanitation Team, which conducts monthly sanitation inspections throughout all food handling areas and generate respective reports.
  • Continually liaises with external agencies (laboratory, government bureau, health practitioners, etc.) on sanitary matters.
  • Carry out periodic food safety inspections in the food related areas: receiving area, stores, kitchens and Food & Drinks outlets and communicate the findings to the relevant departments for actions.
  • Daily inspections of all operational Food & Drinks areas including personal hygiene policy of the hotel & Team Member sickness exclusion program.
  • Ensure that the HACCP records for delivery, sanitation of fruits and vegetables, storage, food thawing, temperature control for cooking/reheating/blast chilling/hot holding/display/cold storage/dishwashing/outside catering, are completed on time by the concerned associates, kept on file, reviewed and signed.
  • Participate as an HACCP Team Leader in the HACCP System internal audits, prepare the food safety internal audit, map and communicate it to the relevant departments for actions.
  • Complete, whenever needed and applicable, the non-conformity reports, corrective action requests and management review reports, as part of the HACCP system.
  • Follow up on the actions related to the findings and non-conformities noted during the audits and inspections.
  • Ensure that food/water/ice samples are tested on a monthly basis by an accredited third-party laboratory and reports are kept on file.
  • Monitors the buffet display, temperature control, temperature controlled, food service, proper transporting all high risk item under appropriate temperature.
  • Monitors the implementation of an Integrated Pest Management Program through the hotel’s third party service provider. Report findings and reduce occurrences through adequate steps.
  • Organize the deep cleaning schedules and checklists with the stewarding team. Evaluate implementation of the same.
  • Ensure that the HACCP system is implemented and maintained in accordance to all the procedures and work instructions established.
  • Report the effectiveness and suitability of the HACCP system to the General Manager for review to facilitate improvement of the HACCP system.
  • Initiate corrective actions with liaison with Executive Chef and control nonconforming products until the deviation or the unsatisfactory condition regarding food safety has been corrected.
  • Monitors food suppliers to certify food hygiene and receive good materials, checking the food hygiene, temperature control, delivery staff’s clothing, and vehicles to protect from contamination.
  • Training all food handlers on food safety aspect.

  • Minimum 1-2 years work experience as Assistant EHS & Hygiene Manager in a hotel or similar large restaurant complex, preferable prerequisite is experience in the Hotel industry
  • Responsible self-starter, capable of handling multi-faceted projects and of working under pressure
  • Good communication and guest relation's skills, a proactive problem solver
  • Creative with international culinary focus and flare.
  • Team player, who values teamwork, has good team building skills and is able to communicate effectively with all levels of team members
  • Personable and pleasant to deal with. Reliable and approachable
  • Positive can do attitude and flexible approach manages with humility
  • High degree of integrity. Strong leadership. Nurtures and develops team members, encouraging innovation
  • Good personal grooming and personal presentation
  • Holds a qualification in Kitchen Production, Butchery and Management
  • Good computer skills. - Effective trainer, experienced in the delivery of skills training
  • Familiar with current culinary trends and methods
  • Comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards Certifications
  • Bachelor of Food Science
  • HACCP (Hazard Analysis and Critical Control Point) - ISO 22000 (Food Safety Management System)/ Quality Management System ISO 9001
  • OHSAS 18001 (Occupational Health and Safety management System)
  • Environment Management System ISO 14001
