About The Job

Based at the Mandarin Oriental Downtown, Dubai within the culinary department in Dubai, the Chef de Partie is responsible to carry out and contribute to delivering exceptional craftsmanship that meet our world-class standards of taste, presentation, and food safety.

As a Chef de Partie, you will be responsible for the following duties:

• Ensure all ingredients and recipes are followed precisely, maintaining consistency and excellence.
• Manage daily ordering of ingredients to ensure smooth kitchen operations and inventory control.
• Monitor stock and inventory levels in your section, ensuring timely requisitions and minimal waste.
• Collaborate with the team in the development of new recipes.
• Support broader kitchen operations and cross-functional tasks as needed.
• Uphold and comply with all health, food safety, and hygiene standards in line with hotel policies, HACCP requirements, including those mandated by UAE Municipality.
  
  

As a Chef De Partie, We Expect From You

• High school diploma or equivalent; formal culinary training is an advantage.
• Minimum of 2 years’ experience in a 5-star hotel or high-end restaurant.
• International exposure in at least two regions (Asia, Europe, North America, preferably Middle East) is advantageous.
• Strong understanding of HACCP and food safety practices.
• Effective communication skills in English (verbal & written); knowledge of additional languages is a plus.
• Strong culinary skills with solid knowledge in dish preparation, cooking techniques, and presentation.
