Your Day to Day

As Chief Steward, you will oversee all Stewarding operations, ensuring the highest standards of cleanliness, hygiene, sanitation, and food safety across the hotel. You will lead and develop the team, manage departmental costs and inventory, and ensure all kitchen equipment and operating supplies are properly maintained and available to support smooth and efficient hotel operations in line with hotel and brand standards.

Some of your main role responsibilities are:

• Oversee daily Stewarding operations, ensuring all kitchens, dishwashing, and service areas are clean and properly maintained.
• Supervise, train, and develop the Stewarding team, including duty allocation, scheduling, and performance monitoring.
• Control departmental costs, manage inventory, and ensure efficient use of supplies, chemicals, and equipment.
• Maintain high standards of cleanliness, sanitation, hygiene, and food safety in compliance with HACCP and hotel standards.
• Ensure kitchen equipment, utensils, crockery, and cutlery are properly cleaned, stored, and available for operations.
• Coordinate with the Executive Chef, F&B, and Banquet teams to support daily operations and special events.
• Coordinate with Engineering for preventive maintenance and timely repair of stewarding equipment and facilities.
• Ensure compliance with health, safety, fire, and emergency procedures, addressing hazards promptly.
• Maintain accurate inventories and departmental records while minimizing breakages, wastage, and operating costs.
• Promote teamwork and continuously improve stewarding standards, efficiency, and overall operational performance.
  
  

Ideally, you'll have some or all of the following competencies and experience we're looking for:

• Diploma or certificate in Hospitality Management or a related field is an advantage.
• Minimum 3 years of experience in Stewarding, preferably in a supervisory or leadership role within a hotel.
• Strong knowledge of kitchen hygiene, sanitation, HACCP, and food safety standards.
• Good knowledge of stewarding equipment, cleaning chemicals, and maintenance procedures.
• Experience in team supervision, training, and staff scheduling.
• Knowledge of inventory control, cost management, and operating supplies.
• Strong leadership, communication, and organizational skills.
• Good command of spoken and written English.
• Ability to work under pressure and flexible shifts, weekends, and public holidays.
