POSITION SUMMARY
Reports directly to Chef de Partie and Senior Sous Chef. The Commis is primarily responsible for preparing meal ingredients for the Chef in-charge and assisting with various kitchen duties.
The Commis chef's responsibilities include informing the supervisor of malfunctioning or broken kitchen equipment, unpacking, and organizing deliveries. The chef is also responsible for presenting and communicating transparent inputs that reflect the restaurant's vision, values, and complete offerings of F&B outlets.

KEY RESPONSIBILITIES
OPERATION
- Measures and prepares ingredients, including seasoning of different proteins as well as washing, peeling, chopping vegetables and fruits.
- Prepares necessary cold items and sauces as directed by the Chef de Partie or Chef in-charge.
QUALITY ASSURANCE
- Receives deliveries and verifies that all ordered items have been delivered and are of good quality.
- Ensures correct and identical ingredients are used according to chefs' specifications for consistent quality.
- Discards expired and spoiled food items stored in stock rooms, refrigerators, and freezers.
COMPLIANCE & COLLABORATION
- Complies consistently with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
- Supports chefs throughout the service in synchronizing and preparing all dishes.
- Assists the PIC (Person In Charge) to ensure smooth operation.
HYGIENE & SAFETY
- Maintains a high level of personal hygiene and complies with the Grooming procedures.
- Complies with all Health & Safety regulations while performing daily duties at all times.
- Takes responsibility for reporting any hazard and follows up to ensure the execution of required actions.
POSITION REQUIREMENTS
EDUCATION & EXPERIENCE
- High School Diploma | GED | College Degree.
- EFST Certificate
- HACCP Certificate preferable.
- 2-3years Restaurant/Café (UAE) Experience
- Proven commercial kitchen experience – preferably in the hot, cold, pastry section/bakery.
- Strong knowledge of food health and safety regulations.
- Must understand, communicate in English and carry out instructions in oral or written format.
- Must be physically fit to perform the essential functions.
- Must be able to relate to all levels of management.
- Resourceful, forward-thinking, innovative, and committed.
- Must be willing to add value to enhance health, safety, and productivity.
