Role Overview

The Commis supports the kitchen team by performing basic food preparation, maintaining kitchen cleanliness, and ensuring ingredients are prepared according to quality, hygiene, and portion standards.

Responsibilities

• Prepare ingredients such as chopping vegetables, portioning proteins, and measuring food items according to standardized recipes and FITT Meals nutritional guidelines.
• Support cooking processes by assisting senior chefs with basic cooking tasks, workstation setup, and meal assembly for daily catering and meal plan production.
• Ensure strict hygiene standards by maintaining a clean and sanitized work environment, following HACCP and Dubai Municipality food safety requirements.
• Organize and store ingredients properly, ensuring FIFO (First In, First Out) and correct labeling to minimize waste.
• Assist in receiving deliveries, checking quality and quantity of ingredients before storing them in the correct temperature zones.
• Maintain equipment and tools by reporting malfunctions and ensuring all utensils are cleaned and stored properly after use.
• Follow portion control guidelines to ensure consistency in meal prep and avoid food cost variances.
• Support daily production targets by managing time effectively and completing tasks according to kitchen production schedules.
  
  

Minimum Qualifications

• Previous experience as a Commis or Kitchen Assistant preferred (1–2 years), ideally in catering, meal prep, or high-volume kitchen operations.
• Basic understanding of cooking techniques, food prep, and kitchen operations.
• Experience working in a fast-paced environment is an advantage.
  
  

Preferred Qualifications

• Knowledge of food hygiene and safety standards (HACCP preferred).
• Ability to follow recipes, instructions, and portion guidelines accurately.
• Good time management and organizational skills.
• Strong teamwork, communication, and a willingness to learn new skills.
