About the Job:

An opportunity has arisen for an Executive Chef to join the Kitchen Admin in Jumeirah Saadiyat Island. The main duties and responsibilities of this role are:

  • Ensuring measurable quality objectives are established and actively participate in the review of these objectives
  • Ensure that HACCAP and other local regulations are adhered to ensure the highest food hygiene standards
  • Communicate daily with the Executive Sous Chef (or designates) and Restaurant Chef de Cuisines (or designates) in order to disseminate relevant and up dated information to inform of policies and procedures, special further improvement plans, events and guest comments.
  • Provide constant coaching, counselling and discipline to colleagues to ensure their capability to meet the needs of the customer and the organization.
  • Assist in planning of menus and designing standard recipes in order to ensure consistent quality in food production, thereby satisfying guest needs and expectations.
  • Identify market needs and trends in terms of food for both hotel guests and local markets.
  • Attend meetings and briefings as directed by the Hotel Management.
  • To attend Executive Committee meetings.
  • Ensure manning and competence level of selected colleagues is sufficient for the department to meet the needs of the organization and customer.
  • Formulate and continually upgrade a Departmental Operations manual, detailing standards of performance, policies and procedures and service
  • standards pertinent to the efficient operation of the outlet in accordance with the hotel policy, with continuous improvement in mind.
  • Interact with management of other departments within areas of responsibility and to develop solid working relationships with them.
  • Liaise with SC&L to ensure prompt and efficient purchasing, issuing of supplies, stock control and inventory control.
  • Liaise with stewarding department in order to ensure adequate supply of equipment and to establish acceptable standards of hygiene and cleanliness for all kitchen areas.
  • Liaise with Conference & Events and Outlet Managers in order to ensure a consistently high standard of food quality, efficient profitability and creative presentation.
  • Liaise with Engineering in order to ensure prompt and efficient repair and maintenance of Culinary related equipment.
  • Make recommendations to Management for the modernization of equipment, production methods & presentations.


About you:

  • The ideal candidate for this position will have the following experience and qualifications:
  • Culinary Diploma or Equivalent in catering/Hotel Management
  • Minimum 10 years of international experience in a five-star hotel and restaurants Experience running large multi-outlet venue
  • Ability to develop and create standardized recipe/menus Ability to plan and implement food promotions
  • Ability to work with and understand HACCP
  • Has excellent English skills both written and verbal Ability to negotiate at a senior level
