About The Job

Based at the Mandarin Oriental Downtown, Dubai within the RB&E team, the Beverage Manager is responsible for the strategic development, execution and performance of all beverage operations across the hotel. Beverage Manager reports to the Assistant Director of RB&E.

As a Beverage Manager, you will be responsible for the following duties:

  • Develop and execute a comprehensive hotel-wide beverage strategy across all outlets, creating innovative wine, spirits, cocktail, coffee, tea and non-alcoholic programs that enhance guest experiences, drive revenue and maintain competitive market positioning.
  • Lead beverage menu engineering, seasonal promotions, brand partnerships and activations while curating venue-specific beverage selections, managing wine cellars and overseeing coffee and tea programs to maximise profitability and guest satisfaction.
  • Establish and enforce beverage operating standards, recipes, SOPs and quality controls, ensuring full compliance with licensing, health, safety and regulatory requirements through regular audits and performance reviews.
  • Drive commercial performance by managing beverage revenue growth, cost control, waste reduction, inventory optimisation, budgeting, forecasting and P&L analysis, implementing corrective actions to achieve financial targets.
  • Oversee supplier relationships, procurement and inventory management, including negotiations, product selection, stock control, variance investigations and strategic partnerships that deliver commercial value and enhance guest experiences.
  • Provide leadership, training and development for beverage teams, partnering with cross-functional stakeholders to foster innovation, accountability and service excellence while improving team capability, guest satisfaction and KPI performance.

As a Beverage Manager, We Expect From You

  • Degree or Diploma in Hospitality Management, Business Administration or a related discipline, supported by 5–7 years of progressive beverage management experience within luxury hotels or internationally recognised restaurant groups.
  • International hospitality exposure with experience in at least two global regions, preferably including the Middle East, and a strong understanding of diverse beverage markets and guest preferences.
  • Proven expertise in beverage operations, including costing, menu engineering, inventory control, supplier negotiations and the successful management of wine, spirits, cocktail and non-alcoholic beverage programs.
  • Strong commercial and financial acumen with a demonstrated track record of increasing beverage revenue, improving profitability and optimising operational performance.
  • Advanced beverage knowledge across wine, spirits, cocktails, coffee and non-alcoholic categories, with professional qualifications such as WSET Level 3, Certified Sommelier or equivalent preferred.
  • Exceptional leadership, communication and training capabilities, combined with proficiency in POS systems and Microsoft Office applications to effectively manage teams, develop talent and drive business results.
